Brussels Sprouts with Apples and Maple Syrup

2 cups Brussels sprouts, halved

1 medium apple, cut in chunks
1/2 tablespoon olive oil
1 tablespoon butter or margarine
1 tablespoon maple syrup


Cutting board & sharp knife, measuring cups & spoons, skillet and stirring spoon


  1. Heat oil and butter in skillet over medium high heat until butter is melted.
  2. Add Brussels sprouts, cut side down, in a single layer. Reduce heat to medium and cook 3-4 minutes until bottoms are lightly browned, then stir to flip Brussels sprouts and cook 3-4 minutes more.
  3. Add the cut apples and stir often until they are slightly soft with some light browning, 4-5 minutes.
  4. Drizzle with maple syrup and serve.

Refrigerate brussels sprouts in a plastic bag with some air holes up to 1 week. Freeze: Blanch, cool, and freeze in plastic bags.

Cut round sprouts from stems. Trim off yellow outer leaves. Rinse in cold water. Boil, microwave, or steam until tender. Bake, sauté, or braise. Add to soups, stews, and casseroles. Toss with pasta, garlic and oil. Good served with butter, salt and pepper, with grated cheese, or with lemon juice and almond slivers.
