Apple Cinnamon Wrap & Roll

1 ½ tablespoons sugar
½ teaspoon cinnamon
Non-stick cooking spray
1 apple (about 1 cup chopped)
2-3 tablespoons low-fat vanilla yogurt
2 6-inch flour tortillas
1.Mix sugar and cinnamon in a small bowl.
2.Wash and chop apples. Place in a medium bowl.
3.Add yogurt to apples, stirring to combine.
4.Lay tortilla flat on a plate. Lightly spray top side
with non-stick cooking spray. Sprinkle with a spoonful
of the cinnamon sugar.
5.Flip tortilla so unsprayed side is up. Using ½ of the apple mixture fill half of the tortilla, folding other half over mixture.
6.Heat non-stick cooking spray in frying pan on medium heat.
7.Place folded tortilla in pan and cook about 1 minute,
or until lightly browned. Flip to cook second side.
(If pan starts to smoke, remove from burner for a minute, then continue.)
8.Remove from pan and cut in half.
9.Repeat with remaining tortilla.

Choose firm, shiny, smooth-skinned apples with intact stems. Should smell fresh, not musty.
How to Store
Refrigerate apples in plastic bag away from strong-odored foods. Use within 3 weeks.
How to Prepare
Rinse the apples with water. You may scrub them with a produce brush. To peel, use a vegetable peeler or paring knife. Cut away the core and seeds, stem, and ends, then slice each quarter as desired.
